Pantry Raid

A Regular Weeknight Scramble

As I’ve gotten older and more into cooking, I’ve become one of those people who likes to grocery shop more often, buying fewer groceries at a time. It’s been a lifesaver for my produce. However, I travel a lot for work, and sometimes when I know I have a trip coming up, I just don’t go to the grocery store. Then I’m left scrambling, trying to turn pantry odds and ends into dinner. Tonight, it worked out.

What I had in my kitchen: Greek Yogurt, Butter, Pears, Cinnamon, Brown Sugar, Cardamom, Pecans.

What I did: Scoop greek yogurt into a bowl. Melt a spoonful of butter in a pan over medium heat. Slice pears, and drop them into the pan when the butter gets foamy. Sprinkle about a tablespoon of brown sugar over the top, then add cinnamon and cardamom as desired. And one big pinch of Diamond Salt. When the pears are soft, put them in the bowl of yogurt, leaving the brown sugar syrup in the pan. Add pecans and toast. When they smell good, pour the pecans and syrup over the yogurt. Eat it.
